The Moth
I am working on a new project in Dallas, called The Moth. The concept is a “gastro-pub” that serves a great chef driven menu of small plates for sharing and pairing with the diverse and carefully planned beer menu. You can expect great food, perfect beer offerings and educated, professional service. The Moth will have 40 draught beers along with two Cask Ales. 40 draughts seems like a lot, but its not easy deciding which craft beers best represent their particular style. I have decided to start locally and then branch to other cities around the US and then go abroad to bring you the very best selection to be found in this city. The bottle menu can fill in the gaps with a size of 80 or so special selections. I am collecting a number of beers that will be off-menu jewels. Once our staff knows you dig good beer, you’ll have access to all of them. I am working on some vintage liquid to add to the stash. Just ask for the list.
The Moth is located in the Design District of Dallas where Hi-Line and Oaklawn meet. The easy access off the Dallas Tollway to Oaklawn now makes it very accessible from many areas of town. We expect to be open in mid April 2010. Come by and check out the progress or stay posted to this blog. I will attach some shots along the way.

This is great news…I love all the great beers I can get at the saucer…but, sadly, the food is way behind…will there be some crossover promotion between the two places? Can you get UFO Club credit for Moth beers?

This does sound awesome. What a cool project. I wish we had something like that here in Nashville because I agree with Justin, I LOVE the saucer but the food is behind. Can’t wait to see and hear more about The Moth.

There will be no cross-over promotions between FS and Moth. Each are separate companies and we won’t tie the brands together. A number of us will be involved in both concepts though. The same chef is putting together a tasting with Ska and Lagunitas at the Lake Saucer the first Wednesday in March. Come check that out. Only 30 tickets available.

Steve – We try to take it slow when developing ideas. We will likely nurture this first location for awhile before we think about moving elsewhere. Houston may get another Saucer before you know it.

“Houston may get another Saucer before you know it.” I don’t get to the one we have very often because its in downtown and I live way out on the west side. Unless the 2nd one is closer to me, it’ll just be another location that taunts me from afar.

Excellent news! We’ve been hurting for good happy hour places in the industrial / design district and always end up having to go to Uptown. Knowing how myself and many of my co-workers love the Saucer, I am sure this place will be just as great, if not better, for a drink after work!

That does sound awesome… too bad i just moved to Keller. Oh well, the FS in Fort Worth is only about 10 minutes from my house, so I guess I’ll just have to enjoy that?
So if the Moth becomes a success, will the next be on our side of DFW or will it be in a different metro area?
